The analysis of the performance of the restaurant's built environment sought to identify possible problems during the production and use process arising from its design characteristics and how it was executed. Through the application of questionnaires and the on-site survey, it was possible to trace the current profile of the building with the points most observed by users, establishing the connection of these elements with the current characteristics of the building and the conditioning form of these attributes in the restaurant's routine. Therefore, the construction of the building's energ. profile makes it possible to identify the sectors that need more attention and also allows testing the effectiveness of possible interventions, based on the diagnosis of each element. Thus, once the main causes of the inefficiencies present in the building are identified, these same aspects can also be revised in the other units and, thus, the best maintenance and management of this type of public building.
